Ingredients
- 300g oats
- 100g seeds (e.g. chia, pumpkin, sunflower)
- 150g nuts (roughly chopped)
- 50g flaked almonds
- 50g coconut flakes
- 150g dried fruit (e.g. apple, apricot, raisins)
- 8-10 dates, soaked
- 80g butter
- 125ml maple syrup
- 50ml honey
- 2 tbsp vanilla paste
- 2 tbsp mixed spice
- flaked salt to sprinkle (to taste)
Method
- Preheat the oven to 150C.
- Mix the oats, seeds, nuts, and flaked almonds together in a large bowl.
- In a pan melt together the butter, maple syrup, honey, vanilla paste, and mixed spice.
- Pour the melted mixture over the dry ingredient in the bowl and mix well.
- Spread the mixture into 2 baking trays lined with parchment paper.
- Bake for 15 minute, then sprinke the coconut flakes, dried fruit, chopped dates, and salt flakes over the granola mix and return to the over for a further 8-10 minutes.
- Remove from the oven and leave to cool before removing from the baking trays.
- Break into small pieces and store in an air-tight container.
